What Did I Eat on Wednesday?

Breakfast

For breakfast on Wednesday, I started the day with a delicious combination of oats and berries. I first heated up some oats with almond milk and a sprinkle of cinnamon, and then topped the mixture with fresh raspberries, blueberries, and a drizzle of honey. The sweet and creamy oatmeal was the perfect way to start the day – so full of flavor and energy boosting nutrients.

Lunch

My lunch choice for the day was an Asian inspired stir-fry. I chopped up some bell peppers, carrots and zucchini and sautéed them in a hot wok with some sesame oil. I then added some cooked soba noodles, and flavorful sauces. I also threw in some chopped scallions for a bit of crunch. The colorful stir-fry was a wonderful dish for lunch.

Dinner

For dinner I decided to keep it simple with a comforting bowl of warm rice and beans. I first cooked some white rice, and then tossed in black beans and sautéed mushrooms. I topped the bowl off with a dollop of guacamole, a sprinkle of fresh cilantro and some freshly squeezed lime juice. The creamy and savory flavors made for an enjoyable and satisfying meal.
