History of Grits

The earliest known recipes for “grated hominy” come from the 1700s. In 1841, the famous American cookbook author Maria Parloa included a recipe for hominy grits in her book The American Housewife: Or, The Theory and Practice of Domestic Economy.

In the 19th century, the word ‘grits’ came into use to refer to the the ground corn porridge. Grits may have gotten their name from the Old English “grytt,” which means coarse meal. The word was then modified to “grit,” which is still used in America today to refer to the meal.

Types of Grits

The most commonly used type of grits is made from white or yellow corn. These grits can have different textures, depending on how they are processed. For example, coarsely ground grits are more grainy, while finely ground grits are smoother and more creamy.

The term “instant grits” refers to precooked grits that have been finely ground. Instant grits are often cooked in the microwave and can be ready in just a few minutes.

Cooking Grits
