To make the stew, start by browning 1 to 1.5 pounds of ground beef in a large pot or Dutch oven over medium-high heat. Use a wooden spoon to break the beef into small pieces as it cooks. Once the beef is just cooked through, transfer it to a plate and set aside. Reduce the heat to medium and add 2 tablespoons of olive oil to the pot. Once the oil is hot, add 1 diced onion, 2 diced celery stalks, 2 diced carrots and 2 cloves of chopped garlic. Season with 1 teaspoon of salt. Lastly, add 1 cup of frozen corn kernels, stir everything together and simmer for an additional 5 minutes. Serve warm.

Mix in 1 diced onion, 2 grated carrots, 3 cloves of minced garlic, 1 tablespoon of grated fresh ginger and 1 teaspoon of salt. Add ½ cup frozen green peas and ¼ cup soy sauce. Stir for about 2 minutes, then mix the cooked beef back in. Cook for an additional 3 to 4 minutes, stirring to make sure everything is evenly mixed. Lastly, add 4 beaten eggs and cook, stirring continuously, until the eggs are scrambled and cooked through. Serve immediately.
